Also, here's my recipe for delicious lemon squares. It's based off of Emeril's, but different.
Ingredients
12 tablespoons (1 1/2 sticks), plus 1 tablespoon cold unsalted butter
1 3/4 cups plus 3 tablespoons flour
1/4 cup cornstarch
2/3 cup powdered sugar (also called confectioner's sugar.)
3/4 teaspoon salt plus a pinch
4 eggs, lightly beaten
1 1/3 cups granulated sugar
1 1/2 teaspoons lemon zest
3-4 lemons
A bottle of RealLime lime juice
1/4 cup milk (Any type except for skim.)
Directions:
First, set out your butter to thaw.
Lightly butter two 9" circle pans and then line it with wax paper and then butter it again. Do not use Pam. Use Crisco if you have it.
In a large bowl, combine 1 3/4 cups of the flour, 2/3 cup of the powdered sugar, the cornstarch, (GOD I HATE CORNSTARCH) and 3/4 teaspoon of the salt and mix. Cut the remaining 12 tablespoons of butter into small pieces and add to the flour mixture. Using your hands, 2 forks, or a pastry blender, work the butter into the flour mixture until it's pretty doughy. If it's too stiff, add another tablespoon of butter. Please don't melt the butter first, or that'll just complicate things. Press the dough on the bottom and partly up the sides of the pan. Put it in the fridge for 30 minutes.
While the crust is in the fridge, preheat the oven to 350 degrees.
Bake the crust for 20 minutes. It should be golden brown. If it's not, bake it for 5 more minutes and then see what's up.
So, it's baking. Now it's time for the filling, so combine the eggs, granulated sugar, flour, and lemon zest in a medium bowl and whisk with a whisk until smooth. Note: make the lemon zest using a zester; be liberal, it makes it tasty. If you lack a zester, just use a grater or something. Make sure not to get the rind though.
Take out your 3-4 lemons and roll them on the counter, and then put them into the microwave for 15 seconds. Squeeze the lemons into a measuring cup, get the seeds out. You should have about 1/3 cup of lemon juice. Fill it up to the 2/3 cup line with lime juice. Or lemon juice. I suggest RealLemon. So you'll have 2/3 cup of liquid, good. Stir in the mix of lemon and lime juice, milk, and a pinch of salt and mix well. Then go chill.
When the crust is golden brown, remove it from the oven and reduce the oven temperature to 325 degrees F. Stir the lemon mixture again, then pour onto the warm crust. Transfer it to the oven carefully, and dear God don't spill it. Bake until the filling sets, 20 minutes. Put it somewhere good, like the cooktop. Grasp the waxed paper that lines the baking dish and remove the bars from the pan by pulling up gently. The entire dessert should easily dislodge and come away from the pan. Transfer to a cutting board and, using a clean knife, cut into squares, wiping knife after each cut. Cut it to your ideal size; I like 4x4 for a total of 32. Sprinkle the bars with a little powdered sugar. Serve immediately, or refrigerate, wrapped with saran wrap for up to 2 days.
